Lamb kidneys flambéed in brandy served with Rice Pilaf

Quick and easy dish to make, which is always delicious.

Ingredients:

  • Kidneys Lamb (150g per person)
  • a little lemon juice
  • Herbes de Provence
  • 1 large onion
  • 1 glass of brandy
  • Arroces basmati (a brimming handful per person)
  • butter

Preparation of kidneys:

Before starting, peel the kidneys (if you have not done wherever we bought) and cut in halves or quarters (as we want). Put in a bowl, sprinkle it with a little lemon juice and add the herbs of Provence. Let stand while you prepare the other ingredients.

Peel and cut the onion and fry it gets to the caçola that we use to cook and present the kidneys.

When the onion becomes transparent, separates half the onion and reserves for the Arroces pilaf.
